Name of Recipe : Quinoa Salad


Ingredients : 1 cup quinoa
1 tsp coconut oil
1 tsp jeera
1 tsp rai
1/4 cup chopped capsicum ( green,yellow,red)
1/4 cup grated orange carrot
1/4 cup green peas
1 onion finely chopped
1 clove garlic
Salt to taste
Some cracked black pepper
Little chat masala
Haldi 1 pinch
1/2 lemon’s juice


Method : Take the quinoa in a strainer and wash under running water now let it soak in fresh water for 20 mins. now boil the quinoa with 2.5 cups of water and a little salt ..after the quinoa is boiled strain it and keep aside..now in a nonstick pan ,take 1 tsp coconut oil and add jeera rai at once ,do not let the oil smoke else it will go rancid, now add little haldi and add all the chopped veggies and saute a little. Let the crunch of the veggies be intact,do not overcook..now add little salt,cracked pepper and stir in the quinoa. sauté for 2-3 mins and serve hot..add half lemon and little chat masala for the tangy twist.
Now this dish is very much rich in protein, fiber and little carbohydrates as quinoa is a very good source of vegan protein and has little carbohydrates too and its again a good source of fiber, again the veggies give a good amount of fiber and antioxidants as we have used all the three coloured bell peppers.
