Name of Recipe : Khandwi


Ingredients : 1 cup besan
1 cup curd
1 pinch haldi
1/2 inch grated ginger
Salt to taste
3 cups water
1/2 tsp rai
1 spring curry patta
2 tsp oil
Scraped coconut for garnish
Fried green chillies


Method : Combine besan curd haldi salt water ginger and whisk properly so that no lumps are there..now take a heavy bottom pan and cook the mixture on a medium flame for 10-12 mins until the mixture leaves the sides of the pan..stir the mixture continuously..now take 2 plates as in thali and upside down it and now apply little oil to grease the plates and now take the mixture and thinly spread it and now wait for 10 mins to let it set..now after ten mins cut 1 inch stripes as the khandwi is cut and now roll them and keep on a plate and then temper it with rai and curry leaves..garnish with fried green chillies and scraped coconut..serve with TIL chutney
This dish is super rich in protein because of besan and curd gives it a probiotic property..if served with till chutney it becomes rich in calcium and iron too..and in this lockdown period when we r short of resources..very convenient to made.
